Avocado Toast with Scampi Ceviche and Cointreau

Scampi avocado toast

Ingredients (serves 4):

  • Cointreau
  • 400 g Fresh scampi
  • 80 g Cheese spread
  • 30 g Butter
  • 10 leaves Lemon balm (or shizo)
  • 4 slices Toast
  • 1 Tomato
  • 2 Avocados
  • 1 Lemon
  • Flower of salt

Method:

  • Step 1

    Shell the scampi, cut them into small cubes, add the tomato, also cut into small cubes, add the finely chopped also cut into small cubes, add the leaves of lemon balm previously thinly sliced

  • Step 2

    Set aside in the refrigerator

  • Step 3

    Put the cheese spread in a bowl and add one of the two ripe avocados

  • Step 4

    Add the Cointreau and a little fleur de sel

  • Step 5

    Brown the toast in a frying pan with the butter

  • Step 6

    Spread the cheese mixture on the toast, cut the other avocado into slices and place on the toast

  • Step 7

    Add lemon juice, fleur de sel and Cointreau to the scampi "ceviche" and mix with Cointreau, mix and arrange with a circle on each toast

  • Step 8

    Decorate with sprigs of lemon balm and sprinkle with lemon juice and Cointreau
