Simple Basil

Crush 5 basil leaves with a mortar and pestle.

Combine all ingredients in a shaker and add ice.

Shake well with ice, then remove ice and shake again to cause the aquafaba to emulsify.

Serve in a coupe and garnish with a fresh basil leaf.
