How to make a mint foam

In a blender assemble:
- 1 bunch of blanched mint (15 seconds boiling water and 1 minute ice water)
- 300g fresh water
- 30g powdered sugar
Blend and filter
Step 2/6
Soften 2 gelatin sheets in cold water
Step 3/6
Heat the mint water over low heat and add the gelatin sheets
Step 4/6
Whisk
Step 5/6
Put everything in a siphon with 2 cartridges of NO2
Step 6/6
Leave to stand for 2 hours in a cool place and serve
