Corn Treau

How to make
*Tequila and flor electrica: 150ml of White Tequila & 100ml of Electric flower liqueur & 20gr of Lime peel & 10gr of Citric acid & 2gr of MSG
Place everything in a plastic bag, vacuum seal and place in sous vide for 4 hours at 50°C. Then, filter and reserve.
*Low infused corn syrup: 50ml of Corn syrup & 15ml of Cointreau l'Unique & 100gr of Burnt corn pieces & half of a Vanilla pod
Place all the ingredients in a plastic bag, vacuum seal and put in Sous Vide for 2 hours at 60°C. Then, filter and reserve.
*Salt Huitlacoche 500gr: 50gr of Garlic & 5gr of Tajin & 100gr of Salt & 10gr of White pepper & 5gr of Black pepper
Place all the ingredients in a plastic bag, vacuum seal and place in Sous Vide at 60°C for 4 hours. Then grind the resulting mixture and place in a dehydration tray, dehydrate at 55°C for 10h. Grind everything and pass through a sieve so that our salt is as fine as possible.
