Make a salt rim on your glass. Combine all ingredients in a shaker with ice. Shake vigorously until well chilled. Strain into a Margarita glass. Garnish with a lime wheel.

50ml Cointreau
20ml fresh lemon juice
15ml lavender syrup
1 egg white
Add all ingredients to a cocktail shaker. Shake without ice to emulsify the egg white. Add ice and shake again until well-chilled. Strain into a glass and garnish with a sprig of lavender.

2 strawberries

Soda water
In a cocktail shaker, muddle the strawberries, mint and lime. Add Cointreau and ice and shake well. Strain into a glass filled with ice. Top with soda water and garnish with a strawberry and mint sprig.

Often serves in tall champagne flute at brunch, the Mimosa is often part of business or first-class service on some passenger railways and airlines.
